Breakfast Potato Cassarole

1 pound sausage
1 bag frozen hashbrowns (cut up like strings)
1-2 8oz. bags of grated cheddar cheese
4 eggs
½ - ¾ cup heavy whipping cream
Onion to taste

Preheat oven to 375 degrees. Grease bottom of 13x9 pan. Brown the sausage with onion to taste (I use the dehydrated onion flakes from the spice section). Drain the grease. Then, add in the hash browns (this will thaw them). Mix together until thawed and then add in one bag of cheese and mix well. Pour the sausage, hash brown, cheese mixture evenly into the pan. Whip 4 eggs in separate bowl. Add whipping cream and whisk well. Pour egg mixture evenly over top of the casserole. Last, add about 1 cup of grated cheese to the top. Bake at 375 for 45 minutes or until done (sides will pull away).
